Today I decided to show you what I eat in a day, but first, let us talk about my lifestyle/diet. My number one goal when it comes to food is to have a good/healthy relationship with food. I do not believe in diets. If you read my previous post about my fitness update, you would know that I have been trying to be more active and eat healthier. About three weeks ago, I decided to cut meat out of my diet again. I say again because I used to be a pescatarian. I started to eat meat again about two years ago while in college. As you may know, you need to dedicate a lot of time to follow a diet that is not the “standard American diet”. In order words, I took the easy way out.
Despite the fact that I called myself a pescetarian I never liked the thought of giving my eating choices a name. However, it makes it so much easier for people to understand my way of eating. I always get asked: Are you a vegetarian? Are you vegan? Why don’t you eat meat? My honest answer has always been because I DO NOT LIKE IT and is true. I have never found pleasure in eating meat. I was always the weirdo who used to get a turkey sandwich and take the meat out or ask for whatever meat dish and give the meat to my friends or boyfriend at the time. So for me, it is not hard to quit eating meat. I believe the most challenging thing I have been trying to do is giving up dairy products. I am a cheese and ice cream lover.

- Kale (The bottom part is all Kale)
And of course, I always bring an avocado in my lunch bag! ❤
SNACKSThese are my go to snacks. Strawberries and Kiwi and some protein from Almonds.

DINNERI know it might look a little weird, but I roasted some eggplant and layer them with Smoked Provolone Go Veggie cheese. I then topped it with some left over sweet potato.
